I have several clients that use Google Suite. We have their DNS records at GoDaddy set there with an 'A' record pointed to the website hosting server and the MX / mail DNS records set for Google. However, AutoSSL is recording an error in it's logs

Code:
 Local HTTP DCV OK: www.DOMAIN-NAME.EXT
WARN Local HTTP DCV error (mail.DOMAIN-NAME.EXT): “mail.DOMAIN-NAME.EXT” does not resolve to any IP addresses on the internet.
6:25:13 AM ERROR Local DNS DCV error (mail.DOMAIN-NAME.EXT): The DNS query to “_cpanel-dcv-test-record.DOMAIN-NAME.EXT” for the DCV challenge returned no “TXT” record that matches the value “_cpanel-dcv-test-record=OfOvN2i6noUQImJyEwV8nG4sZpxTHQCSnVQqtjoBLE99LyHnZuf81bNN9lTfmgs8”.
6:25:13 AM Analyzing “DOMAIN-NAME.EXT”’s DCV results …
6:25:13 AM ERROR Impediment: NO_UNSECURED_DOMAIN_PASSED_DCV: Every unsecured domain failed DCV.
I removed the mail.DOMAIN-NAME.EXT DNS record from the cPanel DNS settings but that didn't help.

How can I simply have AutoSSL to ignore any domain 'mail' settings for those accounts that use Google Suite or any other external service?

You should be able to log into each client's cPanel interface, navigate to SSL Status, and then click the Exclude from AutoSSL option so that it won't even try to issue a cert for those mail.domain.ext hostnames.
