So I'm running CentOS v7.9.2009 STANDARD with cPanel Version 110.0.5.
I now cannot update cPanel at all, correct? I must migrate CentOS to something before I can install the next cPanel 112.0.3 that it wants to upgrade to, correct?

It's just it tells me "Support for version 110 will end June 30, 2024", but there are no new v110 releases now so this extra year means nothing from what I can see.

cPanel will keep supporting v110 until 30th 2024. It will receive security updates - but that's about it. You don't need to upgrade your distro before next year unless you want to gain access to the features that v112+ provides.
